Salmon Cakes

I'm knee deep in "projects" this week - everything from an ice pop recipe book to an 80s cassette tape centerpiece. More details to come on all of these projects soon! All the projects have left little time for blogging, but I thought I would quick share a recipe I made a few months bake.

Blake was convinced that he wouldn't like them, but I made him take a bite and he loved them! Despite the rather large list of ingredients, they are actually pretty easy to make.

Salmon Cakes
1 can (14.75 oz) of salmon
1 cup crushed saltine crackers
1/4 cup onion diced
2 eggs
2 Tbsp. milk
2 Tbsp. mayo
1 tsp. mustard
1 tsp. lemon juice
1 tsp. parsley
1/2 tsp. garlic salt
1 Tbsp. vegetable oil
Tarter sauce

Combine all of the ingredients except oil and tarter sauce. Heat the oil in a pan over medium-high heat. Form the mixture into patties and fry in pan until golden brown. Flip and fry other side until golden brown. Top with tarter sauce.
