Fajitas always rise to the top of my Mexican cuisine favorites, and I came across this recipe at my old job. One of my coworkers loved to grill and would often host cookouts for our department. Occasionally fajitas would make the menu, and he was kind enough to share his recipe, which our boss actually forwarded on to Dave from his wife. Dave is a bit of a foodie, so if he is willing to not only use the recipe but to share it, you know it's good!
1 clove of garlic
1 1/2 tsp. seasoned salt
1 1/2 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. crushed red pepper
2 Tbsp. vegetable oil
2 Tbsp. lemon juice
1 1/2 lb. beef or chicken cut into strips
Combine the above ingredients and marinate meat for 2 hours or more.
1/2 cup onion sliced
1 1/2 cups red and green peppers
Salsa, sour cream and guacamole
Quickly saute vegetables in oil until lightly browned. Remove from pan and saute meat for 4 minutes. Spoon meat and vegetables onto tortillas and top with salsa, sour cream and guacamole.
