FREE Electronics Recycling!

I got the fun task of getting rid of my parents old computer earlier this week. Fortunately, I found out that Best Buy recycles old computers for FREE! I had to pay $10 to recycle the monitor, but they immediately gave me a $10 gift card. So, the worst part of the experience was lugging the ancient monitor into the store without dropping it! I recycled my laptop at the local recycling center a couple of weeks ago and it cost $20.

They take all sorts of stuff - TVs, DVD players, cell phones, ect. If you need to recycle anything, I'd check out Best Buy's e-cycle program.

Zucchini Time

Blake's new summer hobby is gardening, and for those of us with gardens in Minnesota, its zucchini time. So, I've had to take out all of my favorite zucchini recipes to keep up with the steady flow of produce Blake is providing.

Lemon Poppy Seed Muffins

1 box lemon cake mix
1 small box of instant lemon pudding
1 cup pureed zucchini
3 eggs
1/2 cup vegetable oil
1/4 cup poppy seeds

Mix the lemon cake mix and pudding together. Add the remaining ingredients and stir until moist. Place in muffin pan and bake for 15-20 minutes at 350º.

Zucchini Brownies

2 cups flour
1 1/2 cups sugar
1/2 cup cocoa
1/2 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
1/2 cup oil
2 cups grated zucchini
1 tsp. vanilla

Combine flour, sugar, cocoa, soda, salt and baking powder. Mix in oil, zucchini and vanilla until combined. Batter will be stiff. Pour into a greased 9"x13" pan and bake for 20-25 minutes at 350º.

Frosting:
1 1/3 cups sugar
6 Tbsp. milk
6 Tbsp. butter
1 cup miniature marshmallows
1/2 cup chocolate chips

In a sauce pan, melt the sugar, milk and butter; and bring to a boil. Boil for one minute. Add marshmallows and chocolate chips and stir until dissolved. Let the mixture cool. Beat the mixture with electric mixture until smooth.

Zucchini Meatloaf

1 lb. ground beef
2 cups zucchini
3/4 bread crumbs
3/4 tsp. Italian seasoning
1/2 cup Parmesan cheese
1 Tbsp. chopped parsley
1 finely chopped onion
1 1/2 tsp. (or 2 cubes) beef bouillon dissolved in 3/4 Tbsp. water
1/4 tsp. salt
3/4 cup milk
1 egg, beaten

Combine all of the ingredients and pack into a 8x8" baking dish. Bake at 350º for 75 minutes.

Zucchini Bread

2 eggs, well beaten
2 cups sugar
3 tsp. vanilla
1 cup vegetable oil
2 cups shredded zucchini
3 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
3 tsp. cinnamon

Mix together eggs, sugar, vanilla, oil and zucchini. In a separate bowl, combine the remaining ingredients. Combine the two mixtures and pour into two, greased loaf pans. Bake at 350º for an hour.
